What is a Tigelliera

It is a very particular cooking tool, a specific metallic plate designed to cook several "tigelle" or "crescentine" at the same time. The name of the typical Bologna / Modena's delicacy derives from Tigella, that is the tool that in the past was used to cook them, which was filled with the dough and then baked. Today there are different kind of tigelliera: the cheaper alternative, light and easy to handle, is certainly the one in die-cast aluminum which, technically, is very similar to the cast iron version. This aluminum tool has several advantages: it is solid, light, resistant, perfect to obtain some excellent quality tigelle.

What are the Tigelle

Tigelle (also known as crescentine) are typical specialties of the Emilian tradition, particularly widespread in the Modena and Bologna areas. These are small, perfectly round focaccias that once cooked become soft inside and crunchy on the outside, with a flower-shaped decoration. To obtain the circular shape, is used a tigelliera with several special tiles of the right size. Tigelle are a real must, they can be eaten as a first course, as a single dish or as street food for a walk. They are usually served hot, cut in half and stuffed with traditional cold cuts and cheeses.

How to use a Tigelliera

The good use of this tool is fundamental in obtaining tigelle's perfect cooking: in fact, it must be uniform on both sides. The tigelliera can be heated by placing it directly on the stove and the tigelle must be cooked for 4-5 minutes on each side: in this very simple way you can quickly realize this typical speciality at home and serve them hot and fragrant. At the first use it is necessary to grease the inside of the molds, then dry it with normal absorbent paper.

How to clean a Tigelliera

This aluminum tool is easy to clean like any other utensil or pan made with this material. In particular, it can be washed by hand with hot water and bicarbonate, then passed with a cleansing cream. Subsequently it is necessary to rinse abundantly with water and dry with absorbent paper.
